Portuguese Eggs
Portuguese Eggs is an moderately easy dinner. Made with 8 hard-boiled eggs, 1 can stewed tomatoes, 4 tbsp. butter, pinch of parsley, chives and basil and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cut eggs in half lengthwise.
Put yolks in bowl and thoroughly blend with 4 tablespoons butter, herbs, salt and pepper to taste. Spoon the mixture into the egg whites.
Spread tomatoes over the bottom of a baking dish and place stuffed eggs on them.
Melt 2 tablespoons butter and stir in the flour.
Cook and stir for 3 minutes.
Add the tomato juice and milk.
Stir and cook until smooth and thick.
Pour around and over the eggs.
Sprinkle with cheese and bake at 350Β° for 20 to 25 minutes until brown and bubbly.
