Pork Primavera
Pork Primavera is an moderately easy dinner. Made with 1 lb. pork tenderloin, cut into thin strips, 1 tbsp. olive oil, 1 zucchini, grated into coarse pieces, 8 to 10 cherry tomatoes, halved and drained and 1/2 c. dry white wine, this recipe delivers authentic, satisfying flavors. In a large frypan, saute garlic and pork strips in oil until lightly browned.
Add vegetables and seasonings.
Simmer for a few minutes, stirring, until moisture is almost gone.
Add wine and simmer to reduce liquid.
Pour over fettucine.
Toss all together with cheese.
Serve immediately.
