Pork Chops Monterey
Pork Chops Monterey is an moderately easy dinner. Made with 6 pork chops, 2 tbsp. vegetable oil, 1/2 c. chopped onion, 1/4 c. chopped green pepper and 1 (16 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a large skillet, brown pork chops in oil. Remove chops. Saute onion and green pepper in oil. Stir in tomatoes, water, rice and seasoning. Add chops. Cover and simmer 30 minutes or until water is absorbed. Stir occasionally.
Remove chops and stir 1 cup cheese in rice.
Top with chops and remaining cheese.
