Porcupines
Porcupines is an moderately easy dinner. Made with 6 stalks celery, 1 lb. hamburg, 1 green pepper, finely chopped, 2 eggs, well beaten and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Soak rice for 1/2 hour in water.
Rinse thoroughly and combine with other ingredients except tomato soup or purée.
Mix thoroughly and shape into balls.
Place in a roaster pan and pour 1 can tomato soup or purée over top.
Add sufficient water to come to halfway up the meat balls in pan.
Bake 1 1/2 hours.
After removing the balls, thicken the juice for gravy.
