Poppy Cox
Poppy Cox is an moderately easy dinner. Made with 2 qt. popped corn, 1 1/3 c. pecans, toasted in oven (optional), 1 1/3 c. sugar, 1/2 c. karo (white) and 1 c. butter or margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix together popped corn and pecans.
Combine sugar, Karo, butter or margarine and salt in saucepan and stir until it boils. Cook syrup, stirring occasionally for 10 to 12 minutes, until it turns caramel color.
Remove from fire and add vanilla.
Pour over popcorn mix and stir until covered.
Spread on waxed paper until cool.
Break in pieces and store in a closed container.
