Polynesian Pork
Polynesian Pork is an moderately easy dinner. Made with 6 pork chops, 1 (4 3/4 oz.) jar strained plum baby food, 1/4 c. flaked coconut, 2 tbsp. water and 1 tbsp. vinegar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Trim any excess fat from chops.
Brown in 1 tablespoon cooking oil, season meat salt to taste.
Combine plums, coconut, water, vinegar, soy sauce, 1/2 teaspoon salt, ginger, lemon peel and pepper, pour chops.
Cover and simmer 35 to 40 minutes or until meat is tender.
Remove to warm platter with sauce spooned over.
Makes 6 servings.
