Stir together water, lemon juice, onion and seasonings in a large skillet.

Bring to a simmer.

Add fish; cover and adjust heat to maintain a simmer.

Cook 10 minutes per inch of thickness of thickest part of fish, probably 5 to 10 minutes.

Fish is done when it is opaque and flakes easily with a fork.

Don't overcook or it becomes tough and dry.
