Poached Fish is an easy dinner. Made with 1 1/2 c. water or skim milk, 3 tbsp. lemon juice, 1 bay leaf, a few cloves or peppercorns and 1 lb. fish fillets or steaks of your choice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Stir together water, lemon juice, onion and seasonings in a large skillet.
Bring to a simmer.
Add fish; cover and adjust heat to maintain a simmer.
Cook 10 minutes per inch of thickness of thickest part of fish, probably 5 to 10 minutes.
Fish is done when it is opaque and flakes easily with a fork.
Don't overcook or it becomes tough and dry.
Serve hot with sauce or lemon juice or cold in chunks in salad.
