Plain Risotto
Plain Risotto is an moderately easy dinner. Made with 2 tablespoons olive oil, 1 tablespoon butter, 1 medium onion (chopped), 1 cup arborio rice and 1/2 cup white wine or dry vermouth, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat olive oil and butter in a saucepan on medium high heat. Add onion and saut until soft.
Add rice and saut until rice is coated.
Add white wine or vermouth and stir until all the liquid is absorbed.
Add hot broth 1/2 cup at a time, until it is all absorbed in the rice and rice is tender.
Add hot water if more liquid is needed.
Stir in parmesan cheese and fresh parsley, and serve warm.
