Pizzelle
Pizzelle is an moderately easy dinner. Made with 6 large eggs, 1 c. plus 6 tbsp. sugar, 1/2 c. oil, 6 tbsp. crisco, melted and 1 tsp. anise extract or 6 drops anise oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a large bowl, beat eggs (room temperature) for at least 5 minutes, then add sugar.
Beat until thick and lemon-colored.
In a small bowl, mix oil, anise and Crisco.
Then add it to the egg mixture.
Using a fork, slowly add flour.
Do not beat.
Heat iron.
When iron is hot, put a little oil on a teaspoon (to prevent sticking) and dip into mixture.
Drop walnut size batter into center of hot iron.
Be careful iron does not get too hot. Cook for about 45 seconds to 1 minute on each side or until light golden brown.
After cooled, store in coffee cans.
Freezes well. Makes 4 1/2 dozen.
