Pinto Bean Stew is an moderately easy dinner. Made with 4 c. pinto beans, 8 c. water or more, 1 medium onion, chopped, 1 to 2 garlic cloves, minced and 1 (14 1/2 oz.) can chopped tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Pick over beans and wash.
Put beans in water and bring to a boil.
Put in crock-pot 4 to 8 hours.
Lightly cook onion, garlic and meat (if used) and add to beans with tomatoes, chilies and seasonings.
Simmer 30 minutes to 1 hour to blend flavors.
Serve with chili-corn muffins for complete protein without meat.
