Pinto Bean Pie is an moderately easy dinner. Made with 1 c. cooked pinto beans or 1 can, 1 small can coconut, 1 c. chopped nuts (pecans), 4 whole eggs and 3 c. sugar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mash beans well (use juice).
Beat eggs; add all other ingredients and mix well.
Pour into 3 unbaked pie shells.
Bake 45 minutes to 1 hour at 300Β°.
