Pineapple Sausage
Pineapple Sausage is an moderately easy dinner. Made with 1 1/2 lb. link sausage, 3 stalks celery, cut 1-inch pieces, 1 small onion, largely chopped, 1 bell pepper, cut in 1-inch pieces and 1 (2 lb.) can tomatoes, this recipe delivers authentic, satisfying flavors. Steam sausage and remove until later. In the same liquid, steam celery, onions and bell pepper. Now cut up sausage in bite-size pieces.
When vegetables are done, add sausage and tomatoes.
Cook for 15 minutes.
Drain pineapple juice and reserve it.
Cut pineapple in 1/2-inch pieces while still can and add.
Cook for 15 minutes. Add cornstarch to pineapple juice to thicken gravy and cook for 15 minutes.
