Pineapple Salad
Pineapple Salad is an moderately easy salad you can prepare in just 48 minutes. Made with (16 oz.) can crushed pineapple, drained and juice reserved, water, (6 oz.) pkg. lemon gelatin, (3 oz.) pkg. cream cheese and c. mayonnaise, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a medium size saucepan, place reserved pineapple juice and enough water to make 2 cups. Bring to a boil. Reduce heat.
Add gelatin and cream cheese; stir until dissolved.
Cool. Stir in mayonnaise, pineapple, celery, pecans and pimentos. Pour into gelatin mold and refrigerate until set.
Makes at least 12 generous servings.
