Pineapple Salad
Pineapple Salad is an moderately easy dinner. Made with 1 (16 oz.) can crushed pineapple, drained and juice reserved, water, 1 (6 oz.) pkg. lemon gelatin, 1 (3 oz.) pkg. cream cheese and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a medium size saucepan, place reserved pineapple juice and enough water to make 2 cups. Bring to a boil. Reduce heat.
Add gelatin and cream cheese; stir until dissolved.
Cool. Stir in mayonnaise, pineapple, celery, pecans and pimentos. Pour into gelatin mold and refrigerate until set.
Makes at least 12 generous servings.
