Pineapple Salad
Pineapple Salad is an moderately easy dinner. Made with 1 (no. 2) can crushed pineapple, 1 pkg. lemon jell-o, 1/2 c. sugar, 1/4 tsp. salt and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain pineapple.
Add water to syrup to make 1 1/4 cups.
Heat to a boil.
Add Jell-O and stir until dissolved.
Add sugar, salt and lemon juice.
Chill until slightly thickened.
Add pineapple and carrots.
Fold whipped cream into Jell-O mixture.
Mold in 12 x 7-inch dish.
Better if made the day before you serve it. Serves 8 to 10.
