Pineapple Salad
Pineapple Salad is an moderately easy salad you can prepare in about 1 hour 6 minutes. Made with large can pineapple chunks, drained (save juice!!), mandarin oranges, drained, c. mini marshmallows, c. pecans and c. cool whip, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place juice from pineapple into double boiler.
When hot, add sugar, flour, salt and eggs.
Cook until thick and let cool.
Fold Cool Whip into pudding mixture.
Add fruit and nuts.
Mix well. Cover and let stand in refrigerator for at least 2 hours.
