Pineapple Pie
Pineapple Pie is an moderately easy dinner. Made with 1 (# 2) can crushed pineapple (2 1/2 c.), 1/2 c. sugar, 3 tbsp. cornstarch, 1/4 tsp. salt and 3 egg yolks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix the sugar, cornstarch and salt, together, set aside. In a medium sauce pan heat the pineapple then add the sugar mixture all at once while stirring briskly.
Cook until thick and clear.
Beat egg yolks in a bowl, stir a little of the hot mixture into them; return to the pan and cook 1 minute stirring constantly.
Remove from heat and stir in oleo and lemon juice.
