Pineapple Lime Mold
Pineapple Lime Mold is an moderately easy dinner. Made with 1 pkg. lime gelatin, 1 c. boiling water, 1 c. pineapple juice, 2 (3 oz. size) pkg. cream cheese and 1 c. crushed pineapple, drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a bowl, dissolve the lime gelatin in boiling water.
Add the pineapple juice drained from the pineapple.
Chill until syrupy (30 minutes).
In a second bowl, cream the cheese.
Gradually work in the chilled gelatin syrup, blending until smooth.
After each addition, add the crushed pineapple, chopped celery and nuts.
Pour into a 4-cup mold or individual molds.
Chill 2 hours.
