Pineapple Lime Mold
Pineapple Lime Mold is an moderately easy dinner. Made with 1 1/2 c. cold water, 1 (3 oz.) pkg. lime jello, 1 tbsp. lemon juice, 1 (8 oz.) pkg. cream cheese, softened and 2 (8 oz.) cans crushed pineapple, drained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Bring 1 cup water to boil; stir in jello until dissolved.
Add remaining 1/2 cup water and juice.
Gradually add jello to cream cheese; mix until blended.
Chill until thickened but not set; fold in pineapple, marshmallows and nuts.
Pour into 1-quart mold. Chill until firm.
Turn out onto serving plate, surrounded with lettuce.
Serve with assorted fresh fruits.
