Pineapple Delight
Pineapple Delight is an moderately easy dinner. Made with 1 box vanilla wafers, 2 eggs, 1/2 c. butter, 1 1/2 c. powdered sugar and 1/2 pt. whipping cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Roll 1/2 of wafers and sprinkle in bottom of pan or dish (6 to 7-inch).
Beat eggs, butter and sugar together with egg beater until very thick and creamy.
Spread over wafer crumbs.
Whip cream very stiff.
Mix nuts and pineapple with cream.
Spread over butter mixture.
Roll remainder of wafers and sprinkle over top of cream, nuts and pineapple mixture.
Top with whipped cream. Chill.
