Pineapple-Carrot Mold
Pineapple-Carrot Mold is an moderately easy dinner. Made with 1 (no. 2) can crushed pineapple, 1 pkg. lemon jell-o, 1/2 c. sugar, 1/4 tsp. salt and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Drain pineapple and add enough water to syrup to make 1 1/2 cups.
Heat; add to Jell-O.
Stir in sugar, salt and lemon juice. Chill until slightly thickened.
Fold in pineapple and grated carrot.
Whip cream and fold into Jell-O mixture.
Pour into 8-inch ring mold.
Best to make a day ahead to be sure it is thoroughly set.
