Pineapple Betty
Pineapple Betty is an moderately easy dinner. Made with 1 (20 oz.) can pineapple tidbits, 1/2 c. packed brown sugar, 1/2 c. flaked coconut, 1/2 tsp. cinnamon and nutmeg and 1/4 c. butter, melted, this recipe delivers authentic, satisfying flavors. Drain pineapple, reserving 1/2 cup syrup.
Mix pineapple with sugar, coconut and spices.
Mix pineapple syrup and next 2 ingredients.
Spoon half the crouton mixture into shallow 1 1/2-quart baking dish.
Cover with half the pineapple mixture, remaining crouton mixture and the pineapple.
Bake in preheated 375Β° oven for 40 minutes.
Serve warm with ice cream.
