Pignollata

Mix the flour and salt in a bowl or on a pastry board.
Add the eggs, one by one, mixing well and kneading until the dough has a uniform consistency.

With a sharp knife, cut the strips into 1/4-inch pieces, each piece should be about the size of a pea.
