Pierogi Lasagna
Pierogi Lasagna is an moderately easy dinner. Made with 12 to 15 potatoes, boiled and mashed, 3/4 lb. cheddar cheese, grated, 4 onions, finely chopped, 1/2 lb. bacon, fried, drained and crumbled and 1 stick margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook noodles; put aside.
Mash potatoes and add cheese to potatoes; beat, using a mixer.
Add sour cream.
Saute onions in margarine until soft.
Add half of onions to potato mixture as well as bacon, salt and pepper.
Place layer of noodles in 9 x 13-inch pan, then a layer of potato mixture.
Repeat, ending with noodles.
Top with remaining onions and margarine.
Cover with foil and bake at 350Β° until heated through, 1 to 1 1/2 hours.
