Pickled Squash is an moderately easy dinner. Made with 8 c. sliced squash, 2 c. sliced onions, 4 sliced bell peppers, 1 tbsp. salt and 2 c. cider vinegar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sprinkle squash and onion with salt.
Let stand 1 hour. Combine other ingredients. Bring to a boil. Add squash/onion mix. Bring to another boil. Remove from heat and put in jars.
Makes 7 pints.
