Pickled Squash
Pickled Squash is an moderately easy dinner. Made with 8 c. sliced squash, 2 c. sliced onions, 1 large green pepper, diced, 2 1/2 c. sugar and 2 c. white vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Sprinkle salt on vegetables.
Cover with water and let stand for 2 hours; drain.
Heat sugar, vinegar, mustard seed, prepared mustard and turmeric to a boil.
Pour vegetables in and bring to boil second time.
Pack in jars and seal.
Makes approximately 5 pints.
