Pickled Peaches
Pickled Peaches is an moderately easy dinner. Made with 6 lb. peeled peaches, 3 lb. sugar, 1 pt. vinegar, 1 tbsp. ginger and 2 tbsp. whole cloves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Wash and peel peaches.
Drop peeled peaches into cold salt and vinegar solution (2 tablespoons salt and 2 tablespoons vinegar, 1 gallon water) immediately to prevent discoloration.
Mix sugar and vinegar and hot water; add spices (tied loosely in cloth bag). Boil and skim.
Wash peaches in cold water and drain.
Drop drained peaches into boiling syrup and cook 5 to 6 minutes.
Pack in preheated jars.
Cover with boiling spiced vinegar or let stand overnight in syrup, then pack in jars.
Cover with boiling vinegar.
Seal and process 30 minutes in hot water bath at simmering temperature.
