Pickled Okra is an moderately easy dinner. Made with 3 1/2 lb. small okra pods, 1 pt. white vinegar, 1 qt. water, 1/3 c. salt and 3 small hot peppers (if desired), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel okra tightly in jars.
Put garlic cloves in each jar and pour boiling brine over okra in jar and seal. Hot water bath for 10 minutes in simmering water.
Let sit several weeks before opening.
