Pickled Beets
Pickled Beets is an moderately easy dinner. Made with 4 qt. small beets, 3 c. vinegar, 2 c. water, 2 1/2 c. sugar and 2 tsp. allspice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook the beets until tender.
Slip off skins.
Combine vinegar, water, sugar, spices and salt.
Bring to a boil and simmer 15 minutes.
Add the beets and simmer 5 minutes longer. Pack the beets into (hot) sterilized jars.
If not enough liquid to cover beets, add hot vinegar.
Seal immediately.
Makes about 4 quarts.
