Pickled Beets
Pickled Beets is an easy dinner. Made with beets, 3 c. vinegar, 2 c. water, 3 c. sugar and 2 tbsp. pickling spices, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beets and trim tops leaving 1/4-inch of tops.
Do not break
Boil until tender, peel beets and pour off juice.
Reuse.
In large pot mix vinegar, water, sugar and pickling spices.
When sugar is dissolved, add beets and bring to a boil.
Put beets in clean jars.
Bring juice to a boil and fill jars.
Seal while hot.
