Pickled Beets
Pickled Beets is an moderately easy dinner. Made with 2 (16 oz.) cans sliced beets, drained (reserving liquid), 1 c. sliced onions, 2/3 c. vinegar, 5 whole cloves and 2/3 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

If necessary, add water to reserved beet juice to equal 2/3 cup.
In large saucepan, combine all ingredients.
Bring to a boil.
Reduce heat; simmer 10 minutes, stirring occasionally. Refrigerate.
Before serving, drain; remove cinnamon sticks and cloves.
Makes 8 servings.
