Pickled Beets
Pickled Beets is an moderately easy dinner. Made with 2 (16 oz.) cans small whole beets, 3/4 c. sugar, 1 tsp. ground allspice, 1 stick cinnamon and 1 c. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Drain beets, reserving 1/2 cup of the liquid.
Combine all ingredients except beets.
Bring to boil, stirring to dissolve sugar.
Lower heat and simmer for 15 minutes.
Remove cinnamon stick and add beets.
Let cool some and put in airtight container, jar with lid.
Store in refrigerator, mixing occasionally, for 1 week.
Serve cold.
