Pickled Baby Corn
Pickled Baby Corn is an easy dinner. Made with 1 qt. baby corn, 2 tsp. salt, 3 c. distilled white vinegar, 1 c. sugar and 3 tbsp. mixed pickling spices, tied in cheesecloth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil vinegar in a nonaluminum pan.
Bring enough water to a boil to cover corn.
Add washed fresh corn and cook 2 minutes.
Remove from water and drain.
Boil vinegar with sugar, salt, spices and 1/2 water for 10 minutes.
Pack corn into hot sterilized jars.
Fill jars with vinegar mixture.
Process in a boiling water bath for 10 minutes.
