Pesto
Pesto is an moderately easy dinner. Made with 4 c. basil leaves, lightly packed, 1 c. olive oil, 3 cloves garlic, 1/4 c. parsley and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Put basil into blender.
Add rest of ingredients, except cheese.
Finely chop, punching down as needed.
Add additional oil, if necessary, to attain a loose paste that is not too soupy or runny.
Remove from blender into bowl.
Add cheese.
Great over pasta, fish, bread, etc.
