Persimmon Cookies
Persimmon Cookies is an moderately easy dinner. Made with 1 1/2 c. shortening, 2 c. sugar, 2 eggs, slightly beaten, 1 tsp. cinnamon and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Wash and press fully ripe persimmons through colander.
Cream shortening and sugar.
Add eggs, vanilla and pulp.
Add to flour, cinnamon, salt and soda.
Mix well with other ingredients and add nuts.
Drop from teaspoon onto oiled cookie sheet.
Bake at 350Β° until lightly browned, about 10 minutes.
These can be frozen.
