Perfect Divinity
Perfect Divinity is an moderately easy dinner. Made with 2 c. sugar, 1/2 c. white corn syrup, 1/2 c. hot water, 1/4 tsp. salt and 2 egg whites, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Butter sides of 2-quart saucepan.
In it combine sugar, corn syrup, hot water and salt.
Cook and stir until sugar dissolves and mixture comes to boiling.
Cook to hard ball stage without stirring (strings form from spoon).
Remove from heat. Immediately beat egg whites until stiff. Pour hot syrup slowly over stiffly-beaten egg whites, beating constantly at high speed with electric beater (about 5 minutes).
Add vanilla; continue beating until mixture forms soft peaks and begins to lose its gloss.
Add chopped nuts.
Drop divinity from teaspoon, pushing off with second spoon on cookie sheet covered with waxed paper.
