Peppy Peppers
Peppy Peppers is an easy dinner. Made with 3 red, yellow or green peppers or 1 of each, cut in half lengthwise, 1 (4.5 oz.) pkg. spanish rice, cooked, 1/4 lb. velveeta mexican pasteurized process cheese spread with jalapeño pepper, cubed, 1/4 c. celery slices and 1 tbsp. chopped cilantro, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Remove seeds from peppers.
Combine remaining ingredients; mix lightly.
Fill each pepper with approximately 1/3 cup rice mixture; place in shallow baking dish.
Cover.
Bake at 350° for 30 to 35 minutes or until thoroughly heated.
