Penne Gold
Penne Gold is an moderately easy dinner. Made with 2 tbsp. olive oil, 4 slice pancetta (italian bacon) or prosciutto (italian ham), 2 garlic cloves, minced, 1 (35 oz.) can italian peeled plum tomatoes with juice and salt to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Brown pancetta and garlic in olive oil over medium heat in a large frying pan (7 minutes).
Add tomatoes with liquid, salt and pepper flakes and boil, breaking up tomatoes for 30 minutes or until thick, stirring frequently.
Cook penne in large pot of boiling water until al dente.
Drain pasta.
Put back in pot.
Add sauce and mix to coat.
Add cheese; mix well.
Serve.
