Pecan Roast

Made with 1/2 c. celery, chopped, 1/2 c. onions, chopped, 1/4 c. green peppers, chopped, 2 c. special k cereal (crush after measuring) and 3/4 c. pecan meal (finely ground pecans), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook celery, onion and peppers in 2/3 cup water for 10 minutes.
Mix all ingredients together in a large mixing bowl. Bake in well-oiled loaf pan at 375Β° until nicely browned (about 1 hour).
Serves 8 to 10.
