Pecan Patties
Pecan Patties is an moderately easy dinner. Made with 2 c. sugar, 1/2 c. milk, 1/2 c. karo (white), 2 c. pecans and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil the first 3 ingredients to a soft ball stage, using a candy thermometer. Add nuts and let mixture regain heat.
(It's best to use a heavy pan; this doesn't take long to cook.)
Remove from heat when it comes back to a full boil with nuts in it.
Add butter, vanilla and red coloring.
Beat with spoon until mixture looks creamy and thickens.
Drop or pour into buttered pan or muffin tins.
