Pecan Delights
Pecan Delights is an moderately easy dinner. Made with 2 1/4 c. packed brown sugar, 1 c. butter or margarine, 1 c. light corn syrup, 1/8 tsp. salt and 1 (14 oz.) can sweetened condensed milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In large saucepan, combine first four ingredients.
Cook over medium heat until sugar is dissolved.
Gradually add milk and stir well.
Continue cooking until candy thermometer reads 248Β° (firm ball stage).
Remove from heat; stir in vanilla.
Fold in pecans. Drop by tablespoon on well buttered cookie sheet.
Chill until firm.
Melt chocolate chips and shortening in a microwave-safe bowl or double boiler.
Dip each cluster.
Makes about 4 dozen.
