Pecan Delight
Pecan Delight is an moderately easy dinner. Made with 3 egg whites, 1 c. sugar, 18 ritz crackers, 1 c. chopped pecans and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Beat egg whites until stiff.
Add sugar, a small amount at a time, as you continue to beat whites.
Crush the crackers and mix in with the egg whites.
Add the pecans and flavoring.
Pour into a buttered pie pan and bake at 350Β° for 25 minutes.
Put in Cool Whip and sprinkle coconut on top.
Keep in refrigerator.
