Pecan Cups
Pecan Cups is an moderately easy dinner. Made with 1/2 lb. butter or margarine, 1 small (8 oz.) pkg. cream cheese, 1 c. flour, 3/4 c. brown sugar and 1 c. finely chopped pecans or walnuts, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream together margarine and cream cheese.
Add flour and mix with fork or pastry blender.
Form into 1 inch balls, flatten and carefully press into 2 small greased muffin pans.
Mix brown sugar, pecans, egg, melted butter and vanilla to make filling.
Fill pastry cups with filling, being careful not to overfill.
Bake at 350Β° for 30 minutes.
Cool for 10 to 15 minutes; cup should then easily lift out of tins.
Store covered in refrigerator.
Yields 2 dozen.
