Pecan Balls
Pecan Balls is an moderately easy dinner. Made with 1 cup butter, softened, 1/2 cup sugar, 2 tsp. vanilla extract, 2 cups all-purpose flour and 1&1/2 cups finely chopped pecans, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Preheat the oven to 300 degrees.
Combine the butter and sugar in a large bowl.
Beat at medium speed until light and fluffy, scraping the bowl occasionally.
Add the vanilla, beating until blended.
Add the flour and pecans gradually, beating well after each addition.
Shape into balls, using a small scoop.
Arrange 1- inch apart on an ungreased cookie sheet.
Bake for 18 to 20 minutes or just until the cookies begin to brown around the edges.
Cool on the cookie sheet for 2 to 3 minutes.
Remove to a wire rack to cool slightly.
Sprinkle the warm cookies with the confectioners' sugar. Makes 42 cookies.
