Peasant Potatoes
Peasant Potatoes is an moderately easy dinner. Made with 4 tbsp. unsalted butter, 1 large sweet onion, diced, 2 large cloves garlic, chopped, 1 tsp. dried oregano and 1/2 lb. smoked beef sausage, cut into 3/4 inch slices, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a large skillet over medium heat, melt butter.
Add onion and garlic.
Cook and stir 5 minutes or until onion is transparent. Stir in oregano and sausage and cook about 5 minutes more.
Stir in potatoes, salt and pepper until potatoes are well coated with butter.
Place mixture in slow cooker.
Cover and cook on High 3 to 4 hours or on low for 6 to 8 hours, stirring every hour if possible.
During last 30 minutes of cooking, add cabbage and peppers.
Sprinkle with Parmesan cheese before serving.
Makes 6 side dish servings or 4 main dish servings.
