Wash, peel and cut pears into 1/4's.

Make syrup of vinegar, sugar and water.

Add spice bag.

Bring to a boil and cook until pears are tender and can be pierced with toothpick.

Remove from heat and allow to plump in syrup overnight.

Pack in jar, leaving 1/2-inch at top.

Bring syrup to boil and pour over pears in jars. Remove air bubbles with knife.

Adjust lids. Process 20 minutes in boiling water bath.

Makes 3 quarts.
