Pear Pickles
Pear Pickles is an moderately easy dinner. Made with 5 lb. hard pears, 3 c. sugar, 1 pt. vinegar, 1 c. water and 2 slices lemon, cut 1/4-inch thick, tied in bag, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash, peel and cut pears into 1/4's.
Make syrup of vinegar, sugar and water.
Add spice bag.
Bring to a boil and cook until pears are tender and can be pierced with toothpick.
Remove from heat and allow to plump in syrup overnight.
Pack in jar, leaving 1/2-inch at top.
Bring syrup to boil and pour over pears in jars. Remove air bubbles with knife.
Adjust lids. Process 20 minutes in boiling water bath.
Makes 3 quarts.
