Peanut Meringue Pie
Peanut Meringue Pie is an moderately easy dinner. Made with 3/4 c. sugar, 2 1/2 tbsp. cornstarch, 1 tbsp. flour, 3 c. milk and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine in saucepan 3/4 cup sugar, cornstarch and flour. Gradually stir in milk.
Cook on medium heat, stirring constantly until mixture thickens.
Add slightly beaten egg yolks and cook 1 minute longer.
Remove from heat and add peanuts and vanilla. Pour into pastry shell.
Make meringue with egg whites and 6 tablespoons sugar.
Bake at 325Β° for 10 to 15 minutes or until meringue is lightly browned.
