Peanut Butter Caramel Corn
Peanut Butter Caramel Corn is an moderately easy dinner. Made with 3 qt. (12 c.) popped popcorn, 1 c. light brown sugar, 1/4 c. peanut butter, 1/4 c. light corn syrup and 1/4 c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 200°.
Lightly oil a 9 x 13-inch baking pan with oil.
Place popcorn in oiled pan and keep popcorn warm in oven while preparing peanut butter syrup.
In a large saucepan, combine brown sugar, peanut butter, corn syrup, water, oil and salt.
Bring to a boil, stirring frequently.
Stir in baking soda and quickly pour syrup over popcorn.
Gently stir until popcorn is well coated. Bake at 200° for 1 hour, stirring every 20 minutes.
Remove from oven.
Stir and let cool.
Break into clusters.
Store in airtight container.
Makes 12 cups caramel corn.
