Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1/2 c. light corn syrup, 1/4 c. boiling water, 2 c. dry roasted peanuts and 1 tbsp. margarine or butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine first 3 ingredients in a large heavy saucepan.
Cook over low heat, stirring constantly, until sugar dissolves.
Cover and cook over medium heat 2 to 3 minutes to melt sugar crystals on sides of pan.
Uncover, add peanuts and cook, stirring occasionally to hard crack stage (300Β°).
Stir in butter and soda.
Pour into a buttered 15 x 10-inch pan, spreading thinly.
Let brittle cool and break into pieces.
Yields 1 1/2 pounds.
