Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. water, 1 tsp. butter, 1 c. light corn syrup and 2 c. raw peanuts, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine sugar, syrup and water.
Cook slowly in a large pot to soft ball (230°).
Add peanuts and salt; cook to hard crack (310°), stirring constantly.
Add butter and soda. Stir to blend (will bubble up).
Add vanilla; pour onto buttered cookie sheet. Pull out with a spoon or spatula. Cool.
Break apart.
Store in an airtight container.
